We use dried foods specially mixed for our store by a long-established Kyoto dried food store.We purchase ingredients such as dried mackerel, dried round cucumber, dried sardines, dried anchovies, and kelp, all of which are made using traditional methods to bring out the umami flavor, and simmer a total of 10 ingredients using pork bones as the base, which is rare for monjayaki, as well as chicken bones and vegetables.The umami flavor is also scientifically proven.
